Recipe: Mahi Mahi with Mango Lime Relish

Mahi Mahi with Mango Lime Relish is a quick meal that is sure to brighten up your dinner routine. 

I always try to plan one dish that is very different from my main holiday dinner dish. That way, when we are all a little worn out on leftovers, I have something delicious up my sleeve. Enter this Mahi Mahi with Mango Lime Relish.

I decided to try to make a Mango Lime Relish that could go with fish. My family loves to eat fish – and yes, I let the two youngest put ketchup on the fish. Tonight’s dinner was a challenge to see if they would go without the ketchup on the table.

I used lime, mango, diced tomatoes, and white vinegar – that’s it! And my ten year old loved it! My two year old still asked for ketchup – but at least he tried it!

For sides, we had the frozen sweet corn and the frozen edamame. It was a hit, thank goodness!

Not only is this Mahi Mahi  a tasty departure from holiday leftovers, it’s also a great dish to make during Lent. I’m all about making things that are simple yet flavorful, and the relish would certainly hold up with other fish, or on its own!
