Challenged and stretched. That is absolutely what Fifteen Minute Suppers is doing to me. But, I love it! I am learning so many new things. And like I promised – if I have a winner, I’ll share it with you.

I haven’t shared my own recipe for three weeks in a row. Guess what that means. That means, my sweet family had to eat something that I couldn’t even photograph. Poor things.

Well, this one – yum!

Let’s start with the fish. I looked for an inexpensive fish that would cook fully in 12 minutes or less. At my local grocery store – Cod is what fit in that criteria.

I sprayed a glass baking dish with Pam, added the frozen cod, and covered generously with Caribbean Jerk seasoning.

After putting this into the oven, I started on the asparagus.

So, I’ll share with you what I learned today. Al dente is not the method of cooking. It is the ‘doneness’ of what you cook. If you cook something al dente, it is soft enough to bite into but gives slight resistance.

I chose to saute the asparagus until they were al dente. (See what I did there? wink.)  I added olive oil to a skillet on medium high, added in the asparagus, and sprinkled delicious salt over the asparagus.

Mom gave me a gift of six different salts, so I thought it would be fun to try one! This one was so perfect. It was absolutely delicious on the asparagus.

Growing up, I was sure I hated asparagus. Now, I am learning that just prefer most vegetables raw or barely cooked.

So, if you are just sure you don’t like something – try cooking it a little differently! You might be surprised.

To bribe the kids into trying the asparagus, I made strawberry lemonade with our juicer.

You may notice a few tomatoes hiding in the background. Don’t tell the kids. No really. With the lemon, you can barely taste them!

I threw all of this in the juicer, minus the lemon peels, added four cups of water and 1/4 cup of sugar.
