When we moved to Arizona, everyone raved about Hatch Green Chiles. I have always been concerned that they would be too spicy for me. I am an absolute wimp when it comes to spicy!

After making this, I can tell you they have the best flavor! They added the perfect amount of yum to this queso. (My mouth is watering just thinking about this.)

All you need when you make this queso is a fun group of friends to share it with!

Hatch Green Chiles

The chiles arrived in an insulated container after being flash frozen. I tell you what – you feel pretty special when a case of frozen goodness shows up on your doorstep!

Berridge Farms, (our family’s farm) has served the Santa Fe market for more than 15 years selling thousands of pounds of fresh hatch green chile each year at the intersection of Cerrillos & Baca in downtown Santa Fe every fall. Our family retails in Santa Fe from mid August to late September. Most weekends, you’ll find two or even three generations of Berridges helping to roast and sell our famous product.

Hatch Green Chiles Queso

Ingredients:

1/2 cup chopped onion

2 Tbsp garlic

2 cups Hatch Chiles

8 Tbsp milk

16 oz white American cheese, shredded

2 tsp olive oil

pepper

Saute the onion in olive oil.

Heat all other ingredients in a large sauce pan on medium heat.

Add onions when done.

Stir constantly as not to burn.

Heat crock pot to high heat.

Transfer from large sauce pan to crock pot to maintain consistency during meal.
