Monday evenings are pretty crazy around here. My afternoon looks like this:
- 3:15pm – Pick up Julia
- 4:40pm – Julia had a babysitting interview for a weekend job
- 5:10pm – Leave for youth group
- 5:30pm – Serve dinner to 50-70 hungry middle and high schoolers
- 6:30pm – Leave to be sure I am home in time to put Riley down for bath and bedtime
The last few weeks, I have been driving through the golden arches on Monday nights to grab dinner on my way home to Riley- not the best way to keep off the 24 pounds that I have worked so hard to loose over the past year. Lean Cuisine has launched a collection of Lean Cuisine Honestly Good meals. All six varieties feature lean proteins like whole white meat chicken breasts and farm-selected vegetables with a flavor-packed sauce. (from here).
Tonight, I came home and heated up my dinner. I had an impromptu picnic on the back porch after dark. Riley joined me and ended up sharing my dinner with me (even though he had already eaten – ha!). It was delicious. Tonight I had the Pineapple Black Pepper Beef. I am pretty picky about my beef. It was wonderful. The meat was tender and had an excellent flavor.
Pineapple Black Pepper Beef is:
- Tender prime rib beef
- Pineapple black pepper sauce in separate pouch
- Green & wax beans, orange & yellow carrots
- Brown & wild rice with pineapple and slivered almonds
I’m not sure how, but I was able to convince Riley that the wax beans were french fries. He ended up eating every single one. This 320 calorie meal was much better than the 830 calories I was telling myself was ok to consume since I was in a hurry.

Some days it’s good to be reminded why I should make good choices. I may not be loosing weight as quickly as I’d like to, but I’m not quitting – not yet. This meal was a great reminder that it can be easy to make good choices!
