Recipe: Breakfast Bowl

Make mornings special with this easy breakfast bowl.

My husband, Brian, loves a great breakfast. It is one of the easiest ways for me to show him how much I appreciate what he does for our family.

Last week, I attended an event with Kroger, showcasing their breakfast offerings. It was a beautiful morning celebrating food, family, and inspirations. I was surrounded by other amazing local influencers enjoying an absolutely lovely morning with music by Las Chollas Peligrosas and art by Kathy Cano-Murillo and Emily Costello. Kathy was our gracious hostess for the morning and her little personal touches were absolutely incredible!

We were challenged after the brunch to create a breakfast from LetsEatBreakfast.com.

It was so fun to watch Brian scroll through and choose which breakfast he wanted me to recreate. He sent me four choices, so I have a feeling I’ll be making the other three very soon!

I created the Breakfast Bowl for him. It was 1/2 hash browns and 1/2 an egg scramble with peppers, onions, cheese, and bacon!

It was so easy and made the entire house smell delicious! He said it was delicious, although none was left for me to taste – that’s a good thing, right?! I loved how it was all in one bowl. What a creative way to serve it!

While the hashbrowns cooked, I prepped everything else. It was so easy. (Don’t tell Brian, ok?!)

Easy Breakfast Bowl Recipe

Ingredients:

  • ½ cup refrigerated hash browns
  • 2 large eggs, beaten
  • ¼ cup cheddar cheese
  • ¼ cup bell pepper, chopped
  • ¼ cup onion, chopped
  • 2 pieces of Hormel® Natural Choice® Bacon, cooked, chopped

Directions:

1. Prepare hash browns according to package in skillet; season to taste.
2. In 8” skillet with cooking spray, saute peppers and onions. Remove from pan and scramble eggs.
3. Stir in peppers and onions to scrambled eggs and add cheese.
4. To serve, place hash browns in a serving bowl. Add eggs and top with bacon pieces.
