I wanted to make the perfect snack for the pool. Have you seen all those cute ideas on Pinterest:  fruit kabobs, super cute themed lunches, and adorable desserts? Well, this easy snack chicken was simple to cook and a huge crowd pleaser. We are entering week five of summer, so I am wanting to throw in some fun and creative ideas to keep them smiling!

As the homestyle chicken fries cooked for twelve minutes, I worked on the rest of lunch.

I wanted to make something that I could just carry out on a tray to make lunchtime and clean-up very easy.

A little ranch dressing in the bottom of a clear cup, stacked with yummy carrots made up the vegetable portion of today’s lunch.

Now, I can’t take credit for this adorable idea. Julia, my sweet thirteen year old, came up with this years ago. She just stuffs a little white chocolate chip inside of a raspberry – cleverly disguising fruit as dessert. Delicious!

The last part of our easy snack chicken lunch was a little cup of cheese crackers.

As I finished up the prep for the four of us, the timer went off and I pulled out the chicken. (Don’t you just get a huge sense of accomplishment when it all times out right?! .

Just a little ketchup and tyson chicken fries finished up the lunch. Smiles all around from my 13, 10 and 2 year old. Every child absolutely cleared their plate!

So, remember this – a cute lunch perfect for summertime fun doesn’t need to be time consuming! Twelve minutes and done = one happy mamma!

Do you have any good pool time snacks I should know about? I’d love to hear it!

Have a wonderful summer,

  1. That’s a great idea to serve them in cups for easy clean up. My little one always gets so hungry after swimming — I think chicken fries would be perfect.
