We have company in town this weekend, the perfect time to try out a new recipe!

I made Baked Chicken Legs and Black Bean Salsa.

We spent the day outside at the pool together, so something fresh and healthy sounded perfect.

KAE_7304

I chopped two Roma tomatoes, 1/4 of an onion and 1/4 of a bell pepper.

I added one can, drained, of First Street whole corn and one can, drained, of First Street black beans.

I mixed these together and squeezed lime on top.

Then, I started working on the chicken.

I lined a glass pan with foil and sprayed the foil with Pam.

I placed the chicken on the foil and added salt and pepper.

The meal was amazing and light and healthy.

  1. This was a big hit at my wedding shower. Very fresh and light. Next time I will cut back on the cilantro. A little strong. Make it a day ahead to let the flavors marry.
