After Julia was born, Brian’s parents stayed with us for a little bit. Brian’s mom cooked for us during that time. It was at that time I had a huge epiphany about what my pantry should look like as a newlywed.

I was buying groceries and making my pantry look like what I was used to growing up. My family ate a lot of chicken, rice, corn, casseroles, and potatoes. When his mother began cooking for us, I was truly surprised how differently she planned meals. And then I was surprised when Brian was going back for seconds. His mom and I started talking about what their pantry looked like. I slowly started buying ingredients for meals that he loved growing up on. I had never thought about that part of marriage. It was a fun way to build a deeper relationship with his mom and hear fun stories about Brian growing up.
I’ve known Brian since I was 16, so I never had thought about getting to know this part of him. I thought everyone ate what my family did at dinner – one meat, one vegetable, and one starch with a glass of milk.
This was the first meal his mom taught me to make for him. It was so easy and we all loved it. Plus, it is a great way to replace chips in your pantry!
Brian asked me to add : **These do not fry up like a potato chip** They are closer to a sauteed vegetable texture. The oil and sea salt make it a delicious chip substitute.
