A few weeks ago, I spent the evening at a backyard party at my friend Wendy’s home. She is an amazing hostess!
Well, she had these appetizers – Blackberries with goat cheese and honey (recipe here) that were out of this world. I’ve been thinking about them since the party and I’m secretly hoping that Wendy just shows up at my door with a tray of them.
Since I’ve been crushing on the flavors, I wanted to try a salad with the same taste and feel.
Ingredients:
1 carton of blueberries
1/4 cup of shredded Swiss cheese
1 cup of arugula
1/4 cup of toasted, honey roasted peanuts
A drizzle of honey
It was so good! It was seriously all I had for dinner tonight – which is saying a lot!
