Recipe: Chicken Burrata

Chicken Burrata is perfect for any dinner party and easy enough for a weeknight family dinner.

A few years ago I was visiting with my dear mentor, Cindy. After an amazing dinner of steak and potatoes, just because she remembered it was my favorite, I was asking her advice on hosting and feeding people. It’s been a year since she passed away and she’s been on my mind so much lately.

She said that her secret was to take one dish at a time and really master it. Eventually, build up a menu of 5-10 dishes that you love to make and that people love to eat! Then, it will never seem like a burden or a chore. You’ll be excited to make the dish and you’ll be excited for your guests to enjoy it!

I never had the opportunity to make this for her, but I’m sure she would love it. After all, it has yummy cheese.

About nine months ago, I was aimlessly wandering the produce section, trying to think of something creative to do with chicken and I had my very first sample of burrata cheese. I fell in love instantly and knew I had to make something with it!

Now it is one of my family’s favorites.

Chicken Burrata

Ingredients

Directions:

  1. Marinade Chicken in Garlic, Herb, and Wine Marinade for 30 minutes
  2. Heat 2 Tablespoons of Olive Oil in large skillet on medium high
  3. Cook chicken thoroughly on both sides (usually 4-5 minutes on each side if fully thawed)
  4. Let chicken rest for five minutes
  5. Serve with roasted tomatoes and burrata.
