My two oldest love the chicken pasta salad with lemon vinaigrette dressing from Pita Jungle. Last week had been a particularly long week. Julia is working and taking a Spanish class. Nate has been studying for the SAT and helping me with projects around the house. I wanted to try and make this for them as a special treat.
I studied a few different recipes online and played around with the dressing until it tasted yummy.
Chicken Pasta Salad with Lemon Vinaigrette Dressing (Pita Jungle Copycat)
Ingredients
- Chicken Breast
- Barilla Rotini Pasta
- Barilla Vegetable Rotini Pasta
- ¼ cup olive oil
- ¼ cup lemon juice
- 2 tsp. minced oregano (or ½ tsp. dried oregano)
- 1 garlic clove
- ½ tsp sugar
- ¼ tsp pepper
- 1/8 tsp salt
- 1/8 tsp onion powder
- 1/8 tsp. garlic powder
Directions:
- Mix together: ¼ cup olive oil, ¼ cup lemon juice, 2 tsp. minced oregano (or ½ tsp. dried oregano), 1 garlic clove, ½ tsp sugar, ¼ tsp pepper, 1/8 tsp salt, 1/8 tsp onion powder, 1/8 tsp. garlic powder. Refrigerate for 2 hours or longer.
- Heat 2 Tablespoons of Olive Oil in large skillet on medium high
- Cook chicken thoroughly on both sides (usually 4-5 minutes on each side if fully thawed)
- Let chicken rest for five minutes
- Boil one package of the rotini pasta and one package of the vegetable rotini pasta
- Cut the chicken and serve over the pasta
- Drizzle dressing over dish as desired

It was quick and easy and everyone ate it!
The kids loved it! They admitted that it wasn’t an exact copycat, but that it was delicious. Since they polished off the leftovers the next day for lunch, I believe them
